I love milk deserts especially rice pudding. They are soothing, comforting and light. This rice pudding is a bit different than ordinary rice pudding. I added a secret ingredient which is called Mastic.
Mastic is a resin obtained from Mastic tree native to Greek Island Chios. There is also limited production of Mastic in Cesme Penninsula of Aegean Coast of Turkey. In Turkey, we use it in Turkish delight, ice cream, deserts, coffee and chewing gum.
Mastic contains antioxidants and has antibacterial and anti fungal properties. It is used in stomach/intestinal ulcers and bacterial/fungal infections and also good for oral health.
Here is the recipe.
1 kg organic full fat milk
1/2 glass starchy rice ( Arborio, Baldo)
1/2 tsp vanilla ( without sugar)
4 tbsp white rice flour
1 knob of Mastic (crushed)
75 ml maple syrup
Wash the rice and put it in the sauce pan with 1.5 glass of water. Bring it boil until rice soft. Stir it with hand mixer for 1 minute. Add rice flour into milk in separate bowl and pour this mixture into cooked rice and stir continuously until boil. Before starting to boil, add maple syrup, mastic and vanilla. Boil another 1-2 minutes and stir continuously. Take it off from heat and stir a couple minutes and pour it into serving small bowls. Leave it cool down. When it is cooled down, place it in the fridge. Serve with cinnamon.
