Guilt-free healthy cookies

Hello everyone

I was searching some recipes as sugar free, gluten free and  which are still tasty at the same time too. I am very keen to find great Turkish baking recipes and modify and adapt them into Gluten free and sugar free culinary. This is my mission now. So  watch this space!

I found one great recipe in http://www.ye-mek.net and twisted a bit and got the great result. It is containing full of fibre and rich in Vitamin A, Vitamin C, iron, calcium, potassium, Vitamin E , zinc, selenium and folate. These vitamins are essential vitamins for human body and  very important for proper digestive function. Also good for skin ,nail and hair.

I used Turkish organic dark colour apricot and Turkish hazelnuts. You need dairy curd in this recipe and I made my own one by coagulating 1 kg of organic whole milk with 3 tbsp yoghurt and half lemon juice. Strain it in cheese cloth and  curd is ready to be used.

here is the recipe for  delicious quick tasty cookies! ( it makes 16 cookies)

Ingredients:

135 gr hazelnuts(no shell)

10 organic sun dried apricots

150 gr dairy curd ( from organic milk) or you can buy it from health shops

1 organic egg

Blend the hazelnuts very finely, add coarsely chopped apricots and blend it again. Add curd and 1 egg and blend for 1o seconds all ingredients last time. It will be soft mixture. Take small pieces and make cookie rolls and place in the baking tray. Bake it in preheat oven at 170 C for 15-17 mins. Take them out and leave it to cool. Serve it with a nice cup of tea.
